Veg Biryani

Vegetable Biryani is a rich and exotic rice dish with spicy vegetables. Biryani is a popular Mughali dish that has

been adapted by Indians. Vegetable Biryani makes a great dish for a formal dinner or can be served as main meal.


  • 2 cups Rice
  • 1 cup Mixed Vegetable (cauliflower, potato, carrot, french beans)
  • 150 gms Green Peas, 4 Tomato
  • 3 Finely Sliced Onion
  • 2 Finely Sliced Green Chillies
  • Salt to taste
  • 1 tsp Red Chilli Powder, 4 Cloves (laung)
  • 2 tsp Cinnamon(dalchini), Caraway Seeds(zeera)
  • 1/2 tsp Black Pepper Powder
  • 1/2 cup Yogurt (curd), 4 tbsp Vegetable Oil
  • 1/2 tsp Mustard Seeds
  • 3 tbsp Dry Fruits (cashew nuts, raisin)


  1. Wash the rice well. Take rice with 3-3/4 cup water and a little salt added to it and 2 tbsp of dry fruits.
  2. Cook it in pressure cooker or in a pan or microwave.
  3. Cut all the vegetables into thin pieces and fry them separately in oil.
  4. Take 1 tblsp oil in a pan and add mustard seeds and other spices and stir them.
  5. Then add onions and stir them for a minute till they get pink in color.
  6. Add salt and red chilli powder and stir.
  7. Add fine chopped tomatoes and fry till they are properly cooked.
  8. Add the fine yogurt and stir well.Heat it for about 10 seconds.
  9. Add all the fried vegetables and also Add the cooked rice and mix well.
  10. Cook for about 3 minutes. Take this vegetable biryani out in a rice serving dish.
  11. Garnish with dry fruits and green coriander leaves.
  12. Serve the vegetable (veg ) biryani hot with raita and pickle.
